Roasted Grouper

Bold flavor. Elegant presentation. Easy enough for a Tuesday.

Grouper is one of Florida’s great gifts — firm, thick, and mild enough to let seasonings shine while holding its own with a heavy sear. Oven-roasting gives you that restaurant-quality golden crust without the mess of a stovetop, and a quick pan sauce ties it all together.

This is the recipe to reach for when you want to impress without spending all evening in the kitchen.

What You’ll Need

  • 2 grouper fillets (6–8 oz each), skin on if available
  • 2 tablespoons olive oil, divided
  • 1 tablespoon unsalted butter
  • 4 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • ½ cup dry white wine or chicken broth
  • Juice of half a lemon
  • Fresh thyme or parsley, chopped
  • Salt and black pepper
  • Optional: a pinch of red pepper flakes


How to Make It

Preheat your oven to 425°F. Let the grouper come to room temperature for 15 minutes, then pat completely dry and season generously with salt and pepper on both sides.

Heat an oven-safe skillet — cast iron or stainless steel — over high heat until it just begins to smoke. Add 1 tablespoon of olive oil, then carefully lay the fillets in the pan. Sear without moving for 3–4 minutes, until a golden crust forms. Flip once, then transfer the entire pan to the oven.

Roast for 6–10 minutes depending on thickness, until the fish is opaque throughout and flakes easily at the thickest point.

Remove the fish from the pan and set aside to rest. Return the pan to medium heat and add the remaining tablespoon of olive oil and the butter. Sauté the garlic for 30 seconds, then add the cherry tomatoes and a pinch of red pepper flakes. Cook until the tomatoes begin to burst, about 3 minutes. Pour in the wine or broth and let it reduce by half. Finish with lemon juice and fresh herbs.

Spoon the pan sauce and tomatoes over the grouper and serve immediately over rice, polenta, or crusty bread.
